1 (8 ounce) package cream cheese, softened
1 (16 ounce) jar dill pickle spears, drained well
1 (4 ounce) package thinly sliced dried beef
Optional: Fresh dill sprigs, for garnish
Instructions
Soften the Cream Cheese: Ensure cream cheese is softened. Microwave for 15-20 seconds if needed, watching carefully.
Prepare the Pickles: Drain dill pickle spears thoroughly. Pat dry with paper towels.
Prepare the Dried Beef: Tear dried beef into smaller, manageable pieces if needed.
Assemble Your Workstation: Set up a workstation with softened cream cheese, drained pickles, and dried beef.
Spread the Cream Cheese: Take a piece of dried beef and spread a thin layer of softened cream cheese on it.
Wrap the Pickle: Place a drained pickle spear at one end of the cream cheese-covered dried beef. Carefully roll the dried beef around the pickle, making sure it’s snug and secure.
Repeat: Repeat steps 5 and 6 with the remaining dried beef and pickles until you’ve used up all your ingredients.
Chill (Optional but Recommended): Place assembled roll-ups on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes.
Serving: Arrange the pickle roll-ups on a platter and garnish with fresh dill sprigs, if desired. Serve chilled.
Storage: Store leftover pickle roll-ups in an airtight container in the refrigerator for up to 24 hours.
Notes
Make sure pickles are well-drained to prevent soggy roll-ups.
Use a thin layer of cream cheese to avoid it squishing out.
Chilling the roll-ups helps them firm up and allows the flavors to meld.
For a spicy kick, add a pinch of red pepper flakes to the cream cheese.
Experiment with different types of cream cheese, pickles, or meat.
If roll-ups are falling apart, make sure the dried beef is wrapped tightly and chill them before serving.
