No-Bake Chocolate Eclair Dessert: A Simple and Delicious Recipe to Try Today

  • 1/4 cup milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the two packages of instant vanilla pudding mix with 4 cups of cold milk. Using a whisk, mix them together until the pudding is smooth and well combined. This should take about 2 minutes.
  2. Once the pudding has thickened, gently fold in the thawed whipped topping. Make sure to do this carefully to keep the mixture light and fluffy.
  3. Grab a 9×13 inch baking dish. Begin by placing a single layer of graham crackers at the bottom of the dish.
  4. Spread half of the pudding mixture over the layer of graham crackers, using a spatula to evenly distribute it.
  5. Add another layer of graham crackers on top of the pudding.
  6. Spread the remaining pudding mixture over this second layer of graham crackers.
  7. Finish with a final layer of graham crackers on top.
  8. In a small saucepan, combine 1 cup of semi-sweet chocolate chips, 1/4 cup of unsalted butter, and 1/4 cup of milk. Place the saucepan over low heat.
  9. Stir continuously until the chocolate chips and butter are completely melted and the mixture is smooth.
  10. Remove from heat and stir in 1 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth. Adjust consistency with more milk if needed.
  11. Pour the chocolate topping over the final layer of graham crackers, spreading it evenly.
  12. Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight.
