  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 cup diced tomatoes
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  3. In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper. Rub this mixture all over the chicken breasts.
  4. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  5. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for 5 minutes.
  7. In a medium bowl, combine shredded mozzarella and cheddar cheese.
  8. Use two forks to shred the rested chicken into bite-sized pieces.
  9. Add the shredded chicken to the cheese mixture and toss until well coated.
  10. Lay out the flour tortillas. Optionally, warm them in a skillet or microwave.
  11. Place fresh spinach leaves and diced tomatoes on each tortilla.
  12. Spoon a generous amount of the chicken and cheese mixture onto the center of each tortilla.
  13. Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top.
  14. Add the remaining 2 tablespoons of olive oil to the skillet and heat over medium heat.
  15. Place the wraps seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  16. Remove the wraps from the skillet and let them cool for a minute before slicing in half.
  17. Arrange the wraps on a serving platter. Optionally, drizzle with ranch dressing and garnish with fresh parsley.
